Evaluating the potential of the desert potato for the food matrix
In the current scenario of climate change, one of the main challenges for agriculture is to adapt to adverse environmental conditions, which are increasingly frequent and severe. This challenge has led to exploring new species and forms of cultivation. This is the case of Hoffmanseggia doelli, or “Kulchao”, a Fabacea capable of generating a tuber in hyper-arid and nutrient-poor soils of the Atacama Desert. In previous work developed in our group, we obtained a protocol for its cultivation in marginal soils in northern Chile, with low water supplementation. The nutritional characterization of the Kulchao tuber revealed that the tuber contains a high nutritional value, highlighting high concentrations of B12, iron and antioxidants. In this Ipre, we want to explore its potential as an ingredient for the food matrix.
